Two kinds of machines, two kinds of failure

High-temp machines sanitize with a 180°F final rinse. Their weak point is everything that makes hot water: booster heater elements and thermostats, incoming water temperature upstream of the machine, and gauges that read 180 while the plate surface never gets close — we verify with irreversible temp labels, not wishful thinking. Chemical (low-temp) machines sanitize with chlorine concentration: their failures are sanitizer pumps that lose prime, crystallized pickup lines, empty jugs nobody logged, and concentrations that drift out of the safe band. Knowing which machine you run changes the entire diagnosis, and half the mis-service we see comes from treating one like the other.

  • Won't fill — fill valves, float switches, clogged inlet screens.
  • Won't drain — drain pumps and the archaeological finds inside them (fork tines, lemon wedges, a shocking number of ramekins).

The detergent-rep gap

Most kitchens have a chemical company that "takes care of the dish machine." Read the fine print of that arrangement: they maintain the dosing equipment — the pumps and tubes that feed their product — not the machine. Wash pumps, heaters, valves, controls, doors and conveyors belong to nobody until they belong to us. If your chem rep has been resetting the same fault for three visits, that's a repair wearing a maintenance costume.

Repair or replace?

Hobart AM-series door machines and their Jackson, Stero and Moyer Diebel counterparts are long-haul equipment — pumps, valves, elements and controls are all rebuildable economics. The replacement conversation starts when the tank or frame corrodes through, or when an undersized undercounter unit is being asked to do a door-machine's job and "failing" nightly. In that second case the fix is right-sizing, and we'll say so — and handle the swap including the booster, plumbing and chemical-feed coordination.
