How conveyor ovens fail
- Belt drive motors and gearboxes. The belt slows, stutters or stops. Drive components are wear items on a machine that runs its motor every second of service — high-volume shops should treat spares as inventory, and we'll advise which.
- Belt tracking and tension. A belt drifting sideways chews its own edge against the frame — caught early it's an adjustment, caught late it's a belt. If you're seeing frayed links or hearing rhythmic scraping, that's the early window.
- Belt-speed controllers drifting. The sneakiest failure in the building: a belt running thirty seconds slow changes every bake without anyone touching a setting. When "the oven's fine but pies come out dark," we check actual traverse time against the display before anything else.
- Blower motors. Air impingement is the entire cooking principle — hot air jets driven by a blower that announces bearing failure as a rising howl. Lose the blower, lose the bake.
- Burners, ignition modules and temperature controllers — the gas train fails in a known order, and controllers in hot flour-dusted air have finite lives.
Split-belt and stacked units
Split-belt machines run two speeds through one cavity — wings on one side, pies on the other — which doubles the calibration surface and the ways a drifting controller can quietly wreck product. Stacked doubles add per-position wear differences. We calibrate each belt against a stopwatch and a bake test, not just the display.

Maintenance: heat plus flour dust is the enemy
- Monthly: clean crumb trays and check belt tracking before the frame does it for you.
- Quarterly: blower inspection, burner and air-finger cleaning, controller verification with a timed pass.
- Always: keep the cooling fans and intakes clear — the electronics survive on that airflow.

Parts and honest math

Repair wins on nearly everything; the replacement conversation belongs to units where the cavity or frame has cooked past straightness, or where a shop's volume has simply outgrown a single belt (the honest fix being a second oven, not a faster belt).
