  • Belt-speed controllers drifting. The sneakiest failure in the building: a belt running thirty seconds slow changes every bake without anyone touching a setting. When "the oven's fine but pies come out dark," we check actual traverse time against the display before anything else.
  • Blower motors. Air impingement is the entire cooking principle — hot air jets driven by a blower that announces bearing failure as a rising howl. Lose the blower, lose the bake.
  • Burners, ignition modules and temperature controllers — the gas train fails in a known order, and controllers in hot flour-dusted air have finite lives.

Split-belt and stacked units

Split-belt machines run two speeds through one cavity — wings on one side, pies on the other — which doubles the calibration surface and the ways a drifting controller can quietly wreck product. Stacked doubles add per-position wear differences. We calibrate each belt against a stopwatch and a bake test, not just the display.
